Recipes: Honey Chilli Potatoes with Sesame
Serves 4
You will need:
4 Large Potatoes (Maris Pipers are best) – peeled and cut chips
For the Coating:
½ tbsp olive oil
1 tsp red chilli powder
2 tsps tomato sauce
2 crushed garlic cloves
Salt
For the Sauce:
½ tbsp olive oil
2 crushed garlic
1 tsp red chilli sauce
2 tsps vinegar
1 tbsp tomato sauce
1 ½ tbsp Boyne Valley Honey
1 tbsp toasted Sesame Seeds
Directions:
Preheat the oven to 200 degrees Celsius.
Grease a baking pan with a non-stick oil spray.
In a bowl combine potato chips, oil, red chilli powder, tomato sauce,
crushed garlic and salt and mix well, making sure the potato chips are well coated.
Place potato chips on a greased baking tray and bake for 35-40 minutes at 200 degrees Celsius.
Turn once.
Heat a heavy bottomed pan, add oil and crushed garlic and sauté on a high flame for a couple of seconds.
Add the red chilli paste, tomato sauce and vinegar and combine.
Add the baked potatoes and toss for a minute on a medium to high flame.
Add the Honey and toss the contents till well combined.
Turn off heat.
Sprinkle with toasted sesame seeds and Serve.
